  • 2/3 cup (160g) creamy peanut butter
  • 3 cups (275g) quick oats (do not use old-fashioned oats)

Instructions

  1. Prepare Baking Sheets: Line two baking sheets with parchment paper or set out about 29 cupcake liners.
  2. Combine Ingredients: In a medium saucepan (2.5 to 3 quarts), mix together butter, sugar, cocoa powder, and milk.
  3. Heat Mixture: Place the saucepan over medium heat and cook while stirring frequently until it reaches a full boil. Allow it to boil for exactly 60 seconds without stirring.
  4. Add Remaining Ingredients: Remove the saucepan from heat. Immediately stir in the vanilla extract, peanut butter, and quick oats until thoroughly mixed.
  5. Drop Cookies: Using a medium (2 Tbsp) cookie scoop or two spoons, drop the mixture onto the lined baking sheets or into cupcake liners.
  6. Set Cookies: Allow the cookies to rest at room temperature until they are set, about 20-30 minutes. To speed up the setting process, you can refrigerate them.
  7. Store: Keep the cookies in an airtight container at room temperature.
